Qamea Resort & Spa is very pleased to announce the appointment of Michele Campbell as the resort’s Executive Chef. Michele is now leading our experienced team of four chefs at the resort, as well as providing expert training and professional, creative cuisine development. Michele will also introduce our new “Healthy Choice” menu items, focusing on low calorie/low fat selections, and as always featuring high-quality ingredients and superior presentation and taste.
Michele has an impressive and extensive track record in the culinary industry. Upon completing her formal training at the Auckland Institute of Technology in 1975, Michele undertook a four year apprenticeship, starting at Manuel’s Restaurant in Taupo, New Zealand, followed by two years at the Union Club in Sydney, Australia. Michele continued to develop her expertise while working under renowned UK Chef Anthony Worrall-Thompson as sous-chef in two of London’s top restaurants, Brinkleys and Menageatois. While in London, Michele regularly prepared meals for several members of Britain’s royal family as well as other well known celebrities. When Michele returned to New Zealand in 1984, she was named Executive Chef for one of Auckland’s leading fine dining restaurants, Sardis, formerly owned by Bryce Earwaker, co-owner of Qamea Resort and Spa. Michele was also Executive Chef for Sails Restaurant on Auckland’s waterfront viaduct. Michele was owner and Executive Chef at Penguin’s Restaurant in Auckland for for years, as well as the Dish Restaurant in Herne Bay for two years. Both restaurants received numerous awards for their high quality cuisine and presentation.
The addition of Michele to the Qamea team will further improve Qamea Resort & Spa’s growing reputation in providing Fiji’s finest dining experience. Ron Eckstrom, resort co-owner, commented, “We are very pleased that Michele has decided to join us at Qamea, and are excited to see some of the wonderful additions she is already bringing to our gourmet cuisine. Michele’s appointment is a testament to Qamea Resort & Spa’s continued commitment to providing a fine dining experience to all of our guests.”
